Healthier Choc and Raspberry Brownie

Instructions

  1. Preheat the oven to 150°C, line a 20cm square baking tray with baking paper.

  2. Melt butter/coconut oil, honey/maple syrup and chocolate in a pot over medium heat, stirring frequently.

  3. Place chocolate mixture, black beans, baking powder and eggs in a food processor and blend until smooth and well combined.

  4. Transfer mixture into baking tray and scatter raspberries over the top.

  5. Bake for 20-25 minutes until set but still fudgey. Allow to cool for 5 minutes before placing in the fridge for 20 minutes to set.

Ingredients

  • 1/4 cup butter or coconut oil, melted

  • 4 Tbsp honey or pure maple syrup

  • 100g dark cooking chocolate

  • 400g tin black beans, rinsed

  • 1 tsp baking powder

  • 2 eggs

  • 1 cup frozen raspberries, defrosted
