Thai Green Fish Curry with Garlic Turmeric Rice

Ingredients

  • 2 cups rice

  • 30g butter

  • 2 tsp garlic, minced

  • 1 tsp turmeric

  • 1 onion, diced

  • 3 tsp garlic, minced

  • 3 Tbsp Thai Green Curry Paste

  • 2 tsp ginger, minced

  • 2 tins coconut milk

  • juice of one lemon

  • 1/2 cup water

  • 1 capsicum, diced

  • 1 broccoli, chopped finely

  • 500g fish fillets, diced

Instructions

  1. Cook rice, butter, garlic, turmeric and 3 cups of water in a rice cooker.

  2. Soften the onion in a pan with some oil for 3 minutes. Add curry paste and stir for 1 minute or until fragrant.

  3. Add ginger and ginger, stir for 1 minute.

  4. Add coconut milk, water and lemon juice. Bring to the boil and simmer for 5 minutes.

  5. Add the vegetables to the sauce mix. Simmer for 10 minutes or until vegetables are cooked.

  6. Add the fish and simmer for a further 5-10 minutes or until cooked through.

  7. Serve fish curry on the garlic rice.
