Chicken and Tzatziki Pita's

Ingredients

  • 8 wholemeal pita pockets

Chicken

  • 4 chicken breasts, diced

  • 2 tsp dried coriander

  • 2 tsp cumin

  • 1 Tbsp olive oil

Salad

  • 1/2 lettuce, shredded

  • 1 tomato, diced

  • 1 red onion diced

Tzatziki

  • 1/2 cup Greek yoghurt

  • 1 Tbsp tahini

  • 1/4 telegraph cucumber, diced

  • 1 Tbsp lemon juice

  • 1/2 Tbsp fresh dill (or 1/2 tsp dried)

  • 1/2 tsp minced garlic

  • Salt and pepper

Instructions

  1. Mix chicken, coriander, cumin and olive oil in a bowl.

  2. Fry chicken in a pan over medium heat for around 10 minutes, until cooked through.

  3. Mix salad ingredients in a bowl. Mix Tzatziki ingredients in another bowl.

  4. Toast pita pockets and divide chicken, salad and Tzatziki between pitas.
