Lamb Koftas on Cauliflower Rice
Instructions
1. Mix kofta ingredients together until well combined. Shape into sausages and put onto a skewer to cook.
2. Heat a large fry-pan on medium to high heat and cook koftas in a little oil, in batches for 6–7 minutes turning regularly until golden and cooked through. Alternatively cook on a BBQ hot plate.
3. Chop cauliflower into florets. Pulse for about 10-15 seconds in a food processor until it resembles rice. Heat in the microwave for 2-3 minutes.
4. Place cauliflower rice in a large bowl with the vegetables and fresh herbs, and mix well.
5. Mix lemon juice, vinegar, oil, salt and pepper together and pour over rice mixture, stir to combine.
6. Portion rice on plates and top with koftas and a dollop of hummus.

1 large head of cauliflower

1 cup chopped cucumber

3/4 cup chopped cherry tomatoes

1/3 cup chopped red onion
-
1/3 cup chopped fresh parsley

Juice of 1 large lemon
-
1 Tbsp red wine vinegar

2 Tbsp olive oil
-
Hummus to garnish
