Roasted Chickpeas

Instructions

  1. Preheat oven to 180 degrees. Lightly rub or spray a baking sheet with olive oil. Spread chickpeas out in a single layer on the sheet.

  2. Roast for about 20 minutes, or until chickpeas are dry to touch. Remove from oven, and increase temperature to 220 degrees (double-roasting gives them a crunchy texture).

  3. Place chickpeas in a large bowl. Pour in olive oil, and stir to coat. Add garlic powder, onion powder, rosemary, and salt. Stir again.

  4. Place chickpeas back on the baking sheet. Roast for another 15-20 minutes, or until crispy and lightly browned.

  5. Cool completely before serving or storing at room temperature.

Ingredients

  • 2 cans chickpeas, rinsed & drained

  • 1 Tbsp extra-virgin olive oil

  • 1 tsp garlic powder or paprika

  • 1 tsp onion powder

  • 1 tsp dried rosemary

  • 1/2 tsp salt
