Banana Bran Muffins with Dried Fruit and Natural Yoghurt

Instructions

  1. Preheat the oven to 200°C.

  2. Place muffin cases in a 12 hole tray. 

  3. Sift flour and cinnamon into a mixing bowl. Add in a pinch of salt, bran, dried fruit and mix well.

  4. In another bowl, mix maple syrup, oil, banana, vanilla, eggs, yoghurt and baking soda until smooth.

  5. Fold the flour mixture into the wet mixture until combined (don’t over-mix).

  6. Spoon into tray and bake for 20-25 minutes or until the tops are lightly golden and a skewer inserted comes out clean.

Ingredients

  • 1 cup self-raising flour

  • 2 tsp ground cinnamon

  • 1 ½ cups bran/oats

  • ½ cup dried fruit

  • ½ cup maple syrup

  • ¼ cup olive oil

  • 3 bananas, mashed

  • 1 tsp vanilla essence  

  • 2 eggs 

  • ¾ cup natural yoghurt   

  • 1 tsp baking soda
