BBQ Chicken and Vege Stir-Fry

Ingredients

  • 10 chicken thighs

  • 2 red onion, quartered

  • 2 leeks, sliced

  • 2 packets of beans (250g), halved

  • Olive oil

  • Salt and pepper

  • Marinade ingredients:

  • ½ cup olive oil

  • 1 tsp salt

  • ½ tsp pepper

  • ½ tsp paprika

  • ½ tsp cumin

  • ¼ tsp cayenne pepper

  • 2 cloves garlic, chopped

  • 3 tablespoons, chopped onion

  • ½ cup chopped fresh parsley

  • 1 ½ cups apple cider, or apple juice

Instructions

1.       Mix marinade ingredients together.

2.       Cover chicken with marinade, set aside.

3.       Prepare vegetables.

4.       BBQ chicken until cooked through, around 15-20 minutes.

5.       Drizzle veges with olive oil, salt and pepper and BBQ until softened, around 5 minutes.

6.       Serve up the veges on plates and top with chicken.
