Asian Chicken Salad

Ingredients

  • 500g chicken, diced 

  • 2 tsp Chinese 5 spice

  • 2 tsp ginger, minced 

  • 3 cups cabbage, finely chopped

  • 2 cups bok choy, finely chopped

  • 2 carrots, grated

  • 1 bunch spring onions, finely chopped

  • 1/4 cup fresh coriander, finely chopped 

Sauce

  • 3 Tbsp soy sauce

  • 3 Tbsp lemon juice

  • 1.5 Tbsp sweet chilli sauce

  • 1 tsp sesame oil 

  • 2 tsp rice vinegar

  • 2 tsp sesame seeds

  • 1/4 cup cashew nuts 

Instructions

  1. Coat the chicken in Chinese 5 spice and ginger, and fry in a pan with oil, salt and pepper until cooked through.

  2. Mix the salad ingredients together (cabbage, bok choy, carrots, spring onions and coriander).

  3. Mix the sauce ingredients and pour over the salad.

  4. Top the salad with cooked chicken, sesame seeds and cashew nuts.
