Eggless Banana Bran Mini Muffins with Cinnamon and Ginger

Ingredients

  • 1 1/2 cups wholemeal flour

  • 1/2 cup oats

  • 1/2 cup coconut (or brown) sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 1/2 tsp cinnamon

  • 1 1/2 tsp ground ginger

  • 3 bananas, mashed

  • 1/2 cup olive oil

  • 1/2 cup milk (use almond or soy milk to make them dairy free)

Instructions

  1. Mix the dry ingredients and the wet ingredients separately in two bowls.

  2. Add the wet ingredients to the dry ingredients, mix well.

  3. Bake in the oven at 180°C for 15 minutes (for mini muffins) or until skewer inserted comes out clean.

Makes 20 mini muffins. Freezes well.
