Cranberry and Nut Butter Seed Slice

Ingredients

  • 2 cups wholemeal oats

  • 1 cup sesame seeds

  • 1 cup pumpkin seeds

  • 1 cup sunflower seeds

  • 80g coconut oil or butter, melted

  • 1/3 cup honey

  • 1/3 cup pure maple syrup

  • 1/3 cup nut butter

  • 1 cup cranberries

Instructions

  1. Preheat the oven to 180°C and line a 30cm x 24cm slice tin with baking paper.

  2. Combine the oats and seeds in an oven tray and roast for around 15 minutes or until lightly golden. Place in a bowl and allow to cool.

  3. Combine coconut oil or butter, honey, maple syrup and nut butter in a bowl. Stir in cranberries.

  4. Mix wet and dry ingredients together.

  5. Press into a prepared tin and place in the fridge for 2-3 hours to set.

  6. Cut into bars and store in an airtight container.
