Smokey Paprika Potato and Avo Salad

Ingredients

  • 1kg potatoes

  • 1 avocado, diced

  • 1 capsicum, finely chopped

  • 1/2 red onion, finely chopped

  • 1 tin whole corn kernals, drained

  • 1 tsp smoked paprika

  • 1 tsp basil

  • 1/4 cup Greek yoghurt

  • 1/4 cup aioli

  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to the boil.

  2. Cut potatoes into 2cm cubes and cook in the boiling water until softened slightly. Drain.

  3. Mix potatoes with all other ingredients.
