Kimchi Fritters with Cashew Aioli

Ingredients

  • 2 cups kimchi

  • 2 cups chickpea flour

  • 1 cup water

  • 2 Tbsp cornflour

    Toppings

  • 1 avocado, diced

  • Sweet chilli sauce

  • ½ packet bean sprouts

  • Cashew aioli (mix all ingredients together in a blender until smooth: 1 cup cashew nuts, 3 Tbsp lemon juice, 1 Tbsp apple cider vinegar, 2 garlic cloves, ½ shallot, ½ cup water, 5 Tbsp olive oil, sprinkle of turmeric for colour).

Instructions

  1. Blend kimchi in a food processor until smooth. Mix together in a bowl with other batter ingredients until well combined.

  2. Heat a dash of oil in a frying pan over medium heat. Spoon batter into pan and flatten into circles (should make 16 small fritters), cook until golden brown on both sides.

  3. Place fritters on a serving tray. Top with some cashew aioli, avocado, sprouts and a drizzle of sweet chilli sauce.
