Roasted Grape, Feta and Caramelised Onion Kumara Crostini

Ingredients

  • 2 medium kumara (long thin shape), cut into 16 rounds

  • 3 Tbsp olive oil

  • 2 cups red seedless grapes

  • 1 large onion, sliced

  • 1 tsp balsamic vinegar

  • Salt and pepper

  • 100g feta, crumbled

  • ¼ cup parsley, finely chopped

Instructions

  1. Preheat oven to 250°C.

  2. Toss kumara rounds in a bowl with 1 Tbsp oil, salt and pepper. Spread out on a baking tray and bake for around 30-40 minutes until edges are crispy, flipping half way.

  3. Toss grapes with 1 Tbsp oil, salt and pepper and spread out on another baking tray. Bake for 35-40 minutes, shaking pan occasionally to roast grapes evenly on all sides.

  4. Heat remaining oil in a pan over a medium heat. Add the onion and cook for around 25-30 minutes, stirring every few minutes so the onion caramelises and does not burn. Add the balsamic vinegar during the last few minutes to coat the onion.

  5. To assemble place some caramelised onion on each kumara round, followed by some feta and a grape. Sprinkle with parsley, salt and pepper. Best served warm.
