Healthier Afghans

Ingredients

  • 1/3 cup coconut oil

  • 3 Tbsp maple syrup

  • 1/2 tsp vanilla

  • 1 cup ground almonds

  • 1/4 cup cacao

  • Pinch salt

  • 1/4 tsp baking soda

  • 2 cups oats

    Icing:

  • 2 Tbsp peanut butter

  • 2 Tbsp coconut oil

  • 1.5 Tbsp maple syrup

  • 2 Tbsp cacao

Instructions

  1. Preheat the oven to 160°C fanbake. Lining a baking tray with baking paper.

  2. In a large bowl mix coconut oil, maple syrup and vanilla.

  3. Add in the rest of the afghan ingredients and mix until well combined.

  4. Roll heaped teaspoons between your hands into a ball, place on the baking tray and flatten slightly.

  5. Bake for 15 minutes.

  6. Combine all icing ingredients.

  7. Cool the afghans before icing. Don’t worry if they appear crumbly, covering with icing and placing in the fridge to set will firm them up.
