Pear and Ginger Loaf

Ingredients

  • 1 egg

  • 1/3 cup brown sugar

  • 90g butter, melted

  • 1/3 cup golden syrup

  • 1 1/4 cup self raising flour

  • 1 tsp baking soda

  • 2 tsp ground ginger

  • 2 tsp ground nutmeg

  • 1 tsp cinnamon

  • 1/2 cup boiling water

  • 1 pear, sliced

Instructions

  1. Preheat the oven to 180°C. Line a loaf tin with baking paper.

  2. Beat the eggs and sugar until blended.

  3. Mix golden syrup and butter, then combine well with the egg mix.

  4. Sift in the dry ingredients, mix well.

  5. Stir in boiling water and pour mixture into prepared loaf tin.

  6. Top with sliced pears and bake for 45 minutes or until a skewer inserted into the centre comes out clean.
