Kiwifruit, Lime and Coconut Muffins

Ingredients

  • 1 ½ cups flour

  • ½ cup brown sugar

  • ½ cup desiccated coconut

  • ½ tsp baking powder

  • 1 Tbsp lime zest

  • 1 egg

  • ¼ cup milk

  • 90g butter, melted

  • 3 kiwifruit, peeled and sliced

Instructions

  1. Preheat the oven to 180°C fan bake. Line or grease a muffin tray.

  2. Combine the flour, sugar, coconut, baking powder and lime zest in a bowl.

  3. In another bowl, mix the egg, milk and butter. Stir into the dry ingredients until just combined.

  4. Spoon the mixture into the muffin tray. Top with sliced kiwifruit and sprinkle with extra coconut if desired. Bake for 20-25 minutes or until a skewer inserted comes out clean.
