Plant-based Pancakes
Ingredients

100g wholegrain oats, ground in food processor

80g ground almonds

2 Tbsp chia seeds

2 tsp cinnamon

Pinch salt

200ml almond milk

2 overripe bananas, mashed

2 Tbsp maple syrup
Instructions

Combine dry ingredients in a bowl, mix well to remove any lumps.

Add milk, banana and maple. Stir well to combine and form a pancake batter. Leave to thicken for 10 minutes.

Warm a large frying pan over medium heat with a tablespoon of coconut oil. Add heaped tablespoons of batter, smooth into a circle and allow to cook for a few minutes before flipping and cooking the other side. Repeat with remaining mixture.
Makes 12 small pancakes.
