Plant-based Pancakes

Ingredients

  • 100g wholegrain oats, ground in food processor

  • 80g ground almonds

  • 2 Tbsp chia seeds

  • 2 tsp cinnamon

  • Pinch salt

  • 200ml almond milk

  • 2 overripe bananas, mashed

  • 2 Tbsp maple syrup

Instructions

  1. Combine dry ingredients in a bowl, mix well to remove any lumps.

  2. Add milk, banana and maple. Stir well to combine and form a pancake batter. Leave to thicken for 10 minutes.

  3. Warm a large frying pan over medium heat with a tablespoon of coconut oil. Add heaped tablespoons of batter, smooth into a circle and allow to cook for a few minutes before flipping and cooking the other side. Repeat with remaining mixture.

Makes 12 small pancakes.
