Prawn & Chorizo Paella

Instructions

  1. Fry garlic and onion in a pan with a dash of oil, lightly brown.

  2. Add all other vegetables and chorizo to the pan, cook until softened (stir frequently). Season with salt and pepper. 

  3. In a pot add tinned tomatoes and chopped tomatoes. Season with salt and pepper. Bring to the boil and let simmer. 

  4. Remove vegetables from pan and set aside.

  5. Add prawns to pan and fry for 5 minutes, turning occasionally. 

  6. Add prawns and rice to tomato pot and let simmer for 10 minutes or until rice is cooked to desired texture, stirring frequently to avoid rice sticking to the pot. 

  7. Add vegetables into prawn/tomato/rice pot. Add a squeeze of lemon juice and a dash of paprika to taste. Simmer for 5-10 minutes.

  8. Plate up!

  • 1 large courgette, diced 

  • 1 large capsicum, diced

  • 1/2 eggplant, diced 

  • 3 tomatoes, diced 

  • 1 onion, diced

  • 4 cloves garlic, minced 

  • 3/4 cup fresh coriander, chopped

  • 12 large prawns

  • 200g chorizo

  • 2 tins tomatoes

  • 1.5 cups rice

  • Lemon juice

  • Paprika
