Basil Pesto Pasta

Instructions

  1. Boil some water in a pot, add the pasta and cook to al dente.

  2. While the pasta is cooking stir fry the veges in a dash of olive oil for around ten minutes, until softened. 

  3. Stir the basil pesto through the pasta and plate up, top with veges.

To make the basil pesto blitz the following in a food processor: 2 cups fresh basil leaves, 1/2 cup freshly grated Parmesan cheese, 1/2 cup extra virgin olive oil, 1/3 cup pine nuts, 3 cloves of garlic minced, 1/4 tsp salt and 1/8 tsp pepper. 

Ingredients

  • 1 capsicum, diced 

  • 1 leek, chopped 

  • 1 eggplant, diced 

  • 1 courgette, diced 

  • 3/4-1 cup fresh basil pesto (see instruction)

  • 500g fresh pasta
