Chicken Tikka Masala on Quinoa Rice
Instructions
1. Cook quinoa brown rice mix according to packet instructions.
2. Cook chicken in a pan with olive oil until cooked through. Set aside.
3. Mix together sauce ingredients.
4. Cook vegetables in sauce until softened. Add in chicken. Simmer for 5 minutes.
5. Serve chicken and veges on quinoa rice, and top with cilantro.

Sauce

2 tsp ginger, minced

3 cloves garlic, crushed

1 tinned tomatoes

1 cup Greek yoghurt

1 Tbsp cumin

1 Tbsp garam masala

1 tsp turmeric

1/2 Tbsp chili powder
