Nutty Seed Bread

Ingredients

  • 1 cup sunflower seeds

  • 1/2 cup almonds, chopped

  • 1/2 cup linseeds

  • 1 1/2 cups rolled oats

  • 2 Tbsp chia seeds

  • 4 Tbsp psyllium husks

  • 1 tsp salt

  • 1 Tbsp honey

  • 3 Tbsp coconut oil, melted

  • 2 cups water

Instructions

  1. Line a loaf tin with baking paper.

  2. Combine all dry ingredients in a bowl.

  3. In another bowl whisk the honey, coconut oil and 1 1/2 cups of the water. Stir in the dry ingredients until well combined (mixture should be thick and slightly wet - if necessary add the remaining water bit by bit until you reach this consistency).

  4. Transfer mixture into loaf tin, smooth the top and leave to sit for two hours or overnight.

  5. Preheat oven to 180°C. Bake in the middle of the oven for 20 minutes. Carefully remove bread from loaf tin, placing it upside down on an oven rack and bake for a further 20-30 minutes until it sounds hollow when tapped. Let the loaf cool completely before slicing.

    Freezes well.
