Bean Salad

Ingredients

  • 2 cans Four Bean Mix, drained

  • 250g green beans, chopped

  • 1 medium kumara, diced

  • 1/2 red onion, diced

  • 1 green capsicum, chopped

  • 1 red capsicum, chopped

  • 2 celery stalks, chopped

  • 2 Tbsp balsamic dressing

  • Salt and pepper

Instructions

  1. Dice kumara and place in an oven tray lightly coated with olive oil. Roast at 180°C for 20 minutes or until cooked through and slightly crispy. Set aside to cool.

  2. Chop up vegetables, and drain and rinse canned beans.

  3. Toss all ingredients together in a bowl and top with balsamic dressing, salt and pepper.
